    I was making some non dairy Kefir coconut/Almond Yogurt (with B17 kernels and probiotc) and then decided to make some Raw milk based Kefir cheese for the Budwig diet. Kefir is a pro-biotic and starter culture (good bacteria)

    I cant believe what i found could be done with the left over Whey after making the Kefir cheese Which only took 24 ours with RAW milk and kefir starter culture.

    The whey is rich in methionine and cystine, the health-promoting sulfur-containing amino acids – the latter of which helps to produce the master antioxidant glutathione in the liver.

    The sulfur rich compounds bind with the flkax oil and make it water soluble so the body can use it easily on the budwig diet.

    So we could use this left over whey with flax oil to make many dressings, i could not believe that you can use the left over whey to make sauerkraut quicker in 3 days and with NO salt (Which you also use ion the Budwig diet)

    Plus you can use Whey for a colonic (also used in the budwig diet)... this guy used it for a colonic where mainstream medicine failed him. It does not stop there

    This guy went to a lot of trouble and give away detox recipes, If any one wants the non dairy coconut/almond/Kefir with B17 , just let me know, it tasted good BTW. The raw milk Kefir cheese tastes a bit like cream cheese.

      My wife and I were using kefir whey to make sauerkraut in the fall - ready in 3-4 days if you put 4 tbsp of whey in with the pulverized cabbage. If you are making kefir, just leave it a couple of days longer than usual 'til it separates into curd and whey. But be sure to remove the kefir grains before the curd is still liquid (then just leave the kefir sit on the counter and it will continue to separate) or you'll have a hard time getting them out.

      Once things have separated - you'll have solid in the top half of the jar, and liquid on the bottom, just pour it into a cheesecloth and let it hang a few hours, and the whey can be used for fermenting food in a crock.

      As Ash says, you can use the curds with flax oil for the Budwig protocol. And the whey is a great probiotic. Raw milk works, but it's better to skim off the cream first. Pasteurized cow or goat's milk works as well. I have problems with the casein protein in pasteurized milk, but the kefir seems to digest it so that I can drink it without problem.
